Every summer right around this time, the kids and I huddle in a secretive corner of the house and deliberate on what would be THE best father’s day gift ever! Not another tie. Definitely not another grilling contraption. While the latter suggestion was quickly dismissed, it did lead to a discussion about how much daddy loves to grill. That was how these little Brownie Burger Sliders, decadent brownies sandwiched in between two vanilla wafer buns, served with a side of sugar cookie fries were born.
We all at some point have had the ubiquitous vanilla wafer, more than likely it was probably half disintegrated in some version of a banana pudding. I have always found the name ill fitting. To my mind they should have been called Nonillas as they never truly taste like real vanilla; and that belly that protrudes up is certainly not reminiscent of the lightness associated with a wafer. It was time for a makeover!
I wanted to create a basic cookie dough recipe that had the perfect balance of sweetness, could stand up to either being rolled thick or thin, and would maintain its shape when cut out into various forms. These cookies are not overly sweet as most cut out cookies are usually glazed, frosted or sugared.
