Simple syrup is comprised of boiling sugar and water until the sugar is completely dissolved and incorporated into the water to form a homogeneous liquid, which is then cooled.  Simple syrup is an excellent vehicle for flavorings, such as vanilla bean in this syrup, as it is a neutral base.

½  cup (100 grams) sugar

¼  cup (2 ounces/59 ml) water

Seeds from one vanilla bean, preferably Nielsen-Massey

How to Use Them:

Cut the vanilla bean pod in the middle to score the center without cutting all the way through.  vanillabeanOpen the pod and using the back of the knife, scrape out the vanilla seeds.

In a small pot on medium heat, bring the sugar, water, vanilla seeds  and vanilla bean pod to a rolling boil for approximately 5 minutes, swirling the pot intermittently.  Strain through a sieve and cool to room temperature.
